Rhubarb and Lemon Cooler

A refreshing and zingy drink for a hot day.



4 sticks of rhubarb

2 lemons

4.5l/8pt water

450g/1lb sugar


Preparation Time
Overnight for chilling


Cooking Instructions

Wash and chop the rhubarb sticks. Wash and slice the lemons and place all the fruit together in a large bowl.

Boil the water and pour over the fruit. Stir in the sugar and mix until the sugar crystals have dissolved.

Allow to cool then cover and refrigerate overnight.

Strain the liquid and discard what remains in the sieve. Serve chilled or over ice.

Blood Bath Cocktail

A spooky treat strictly for adults.



100ml pomegranate juice

50ml vodka

Dash of raspberry syrup

Dash of lemon juice


Preparation Time
5 minutes


Cooking Instructions

Pour all the ingredients into a cocktail shaker and shake well.

Serve chilled in a martini style glass, or in a tumbler over ice.

Mulled Cranberry Punch

A spicy, warming drink for cold autumn and winter nights.



2l/3.25pint cranberry juice

2 oranges, zested

14 whole cloves

175g/6oz dried cranberries

1tsp vanilla extract

300g/11oz honey

2 whole cinnamon sticks


Preparation Time
25 minutes


Cooking Instructions

Pour the cranberry juice into a large saucepan on the hob and heat on a medium setting.

Add the rest of the ingredients to the juice and heat, stirring occasionally, gently until hot and steamy.

Serve in warmed mugs.

NOTE – This recipe can also be made in a slow cooker set on high, and will take about 20 minutes to warm and will then keep the mixture warm for your party if set on low or auto.

Best Ever Hot Chocolate

A luxurious version of hot chocolate, perfect for cold winter nights.



125ml/4.5fl oz double cream

125ml/4.5fl oz milk

100g/4oz plan or milk chocolate


Preparation Time
5 minutes


Cooking Instructions

Break the chocolate into pieces and place in a mixing bowl.

Heat the milk and cream in a saucepan on the hob until it is almost simmering and remove from the heat.  Do not allow to boil.

Pour the milk mixture over the chocolate pieces and mix together well until fully combined.

Pour into warmed mugs and serve immediately.

For an extra luxurious touch why not add some extra cream and marshmallows to the top.

Mulled Wine

A spicy, warming red wine drink perfect for Christmas or any winter parties.



250ml/0.5pint water

5tbsp demerara sugar

500ml1pint pineapple juice

200ml/0.5pint orange juice

6 cloves

3 allspice berries

2 cinnamon sticks

1l/1.75pint red wine

2 oranges

8 cinnamon sticks for garnish


Preparation Time
30 minutes


Cooking Instructions

In a large saucepan comvine the water, sugar, pineapple juice and orange juice.  Add the cloves, allspice berries and 2 of the cinnamon sticks.

Peel the oranges, cut the rind into strips and add to the mixture.

Heat the pan on a medium hob, bring to the boil then reduce the heat and allow to simmer for 15 minutes.

Add the wine, bring back to boiling point then remove from the heat.

Serve hot in heat-proof tumblers or glasses and garnish with a stick of cinnamon.

Apple & Cinnamon Warmer

A warming, spicy drink to be enjoyed indoors or outdoors at chilly times.



10cm/4inch stick of cinnamon

6 cloves

1l/1.75pint fresh, unsweetened apple juice

2tsbp clear, runny honey

25g/1oz raisins

1 dessert apple

2tbsp lemon juice


Preparation Time
1.5 hours


Cooking Instructions

Make a small piece of muslin into a spice bag to contain the cloves and cinnamon stick, and tie it up.

In a large saucepan, mix together the apple juice, raisins and honey, add thespice bag and leave for 1 hour until the raisins have plumped up and softened.

Peel and core the apple and slice into 4 rings.  Heat the saucepan of apple juice etc on a low heat, add the apple rings and simmer for 20 minutes or so until the apple rings are just soft.  Do not allow the mixture to boil.

Remove the pan from the heat, discard the spice bag and add the lemon juice to the mixture.  Place an apple ring in each of 4 heat-proof tumblers and pour over the hot drink.  A trick to stop glasses cracking when drinking hot drinks is to place a teaspoon into the glass first to absorb the heat.

Alcohol such as Calvados or brandy can be added to this warming drink to give it an extra, adult twist.
