Blueberry Oat Muffins

A light and tasty treat, perfect with a afternoon cuppa.



100g/3.5oz self raising flour, white

100g/3.5oz self raising flour, brown

0.5tsp bicarbonate of soda

0.5tsp baking powder

90g/3oz oats, plus extra for sprinkling

180g/6.5oz fresh blueberries

60g/2oz golden caster sugar

2 medium eggs

284ml carton of soured cream

6tbsp runny honey

6tbsp sunflower oil

Cooking Instructions

Preheat the oven to 180°C/350°F/Gas mark 4.

Sieve the flours into a large mixing bowl, add the bicarbonate of soda and baling powder, oats and sugar and mix well. gently add the blueberries.

Beat the eggs in a large jug and add the ream, honey and oil. Continue to mix until combined.

Tip the wet ingreidants into the dry ingrediants and fold together gently until just combined.

Spoon into 12 muffin cases in a muffin tray. Sprinkle the top of each with a few extra oats.

Bake in the centre of the pre-heated oven for 20 minutes until well risen and golden in colour.

Serve either warm as a breakfast treat, or cool with an afternoon cuppa!
